

This week on You Capture, the theme is FOOD. Now, everyone and I mean EVERYONE knows I adore food. This wasn't really a great week for a food theme around here. We have all been sick. Bailey and Dalton have both had strep, I had a tummy bug, and Michael has had a sinus infection. Its been a mad house here. As a result, I have spent very little time cooking and very little time taking pics. However, tonight I did snap a couple quick pics (on auto- shame on me) after I fixed the Peanut Butter and Pumpkin Pies for tomorrow. Of course I use the quickest and simplest recipes. I don't proclaim to be a world renowned chef. Just a mediocre short order cook. So.. here ya go.. and guess what?! I'll share the recipes too!
Libby's Easy Pumpkin Pie
Ingredients
1 can (30 oz.) LIBBY'S® Easy Pumpkin Pie Mix
2/3 cup (5 fl.-oz can) NESTLÉ® CARNATION® Evaporated Milk
2 large eggs, beaten
1 unbaked 9-inch (4-cup volume) deep-dish pie shell
Directions
MIX pumpkin pie mix, evaporated milk and eggs in large bowl.
POUR into pie shell
BAKE in preheated 425°F. oven for 15 minutes. Reduce temperature to 350° F.; bake 50 to 60 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.
My Peanut Butter Pie
1 (8oz) Cream Cheese (softened)
1 cup Confectioners Sugar
2/3 cup Peanut Butter (creamy)
1 (8oz) Cool Whip
1/4 cup Milk
Mix cream cheese, confectioners sugar, milk, and peanut butter together until creamy and smooth. Add in the Cool Whip, mix until well blended. Put in a baked pie shell or a graham cracker pie shell and chill before serving.

I loves me some Libby's pumpkin pie! So easy, yet sooooooo delicious!

here is the pumpkin cake recipe (so easy!)
beat 2 eggs lightly, add 15oz pumpkin to eggs, mix until smooth.
add 1 box of spice cake mix, 2 tsp baking soda and 2/3 water (alternate mixing all those ingredients in)
pour it in the pan and bake for 30 minutes.
for the icing - i used a cream cheese icing (cream cheese and powdered sugar)
OR another yummy icing on this is:
1 container whipped topping
1/4 cup brown sugar (no lumps)
1 tsp vanilla
mix it all together and spread it on.

I had a serious pie revolt this year (nobody ever likes banana cream...), so next year I think I'll try your PB Pie. Looks scrumptious!
